Here is an easy, healthy recipe that you can make without having to cook anything or dirty a pan. I love a good creative salad that strays from the norm. While I wouldn’t say this has anything exotic, it’s a nice change to the old lettuce and carrot ruse. Here is what you’ll need for this black bean tomato salad:
Salad:
- 1 can of Organic Black Beans (drained)
- 2 smaller on the vine Tomatoes or 1 large Tomato (chopped into cubes)
- small handful of Cilantro (chopped)
- 1 ripe Avocado (chopped into cubes)
- 2 Green Onion Stalks (chopped)
Dressing:
- 2 good squeezes of Lemon
- Dash of Olive Oil
- Dash of Salt and Pepper
You can use all natural Italian or fruit vinaigrette if you don’t want to make your own dressing. Just chop and mix all ingredients in a large bowl and you’re good to eat! Thanks for reading!

Salad

Instructions
- Add beans and chopped veggies to large bowl.
- In separate small bowl mix lemon juice, olive oil, salt and pepper.
- Add dressing to veggies and mix.
Notes
- Instead of lemon dressing, you can use Italian or fruit Vinaigrette.
- I sometimes add chopped cucumber and pumpkin or sunflower seeds if I have them.
